These plans are for a 275 gallon oil drum smoker that I built. It’s basically a horizontal barrel smoker with a firebox underneath. I use this smoker for cooking briskets, pork butts and other large cuts of meat.

The 275 gallon drum is about 8″ x 14″ and 33″ tall, which makes it much taller than the 30 gallon barrels that most people use for smokers. This means that the firebox is located below the meat rather than above it like the other designs I’ve seen on the web.

I’ve cooked many briskets in this smoker and they’ve all turned out great! The secret is to use lots of wood chips or chunks and let them smolder slowly in your firebox until they turn into coals.
